I have always been very open and honest about our journey to baby Yarro.
The thing is, when we turned the corner from fertility treatments to adoption, the open doors between you and I slowly closed in a way. Not tightly shut by any means, but there was definitely a bit of pull back on my part. Why? Well it’s actually quite simple. When we were knee deep in our treatments, it was about Anthony and I. That’s easy to talk about. We were the ones experiencing everything, we were the ones feeling all of the feelings. But when everything shifts to adoption, there is another piece of the puzzle that becomes part of your world. That piece is a young woman, a courageous young woman, and from the moment you step forward, you want nothing more to protect that woman, the one who will be giving you the most precious gift anyone could ever give to another human, her child.
I don’t by any means want to be cryptic in this situation. I don’t want you to read between the lines. I will say the first baby we were being considered for fell right through our fingertips just as quickly as it became an inkling of a possibility. That HURT. Bad. And that is when I realized that this road was going to be just as much a roller coaster ride if not more than the last 5 years have already been.
But here is what I will tell you today, friends. I will tell you first, that there will be a day that you will see a beautiful love letter from me to this young woman out there who is carrying our precious gift. I will tell you that we currently have more hope than we have ever had in our years of loss and trying everything to have a perfect little one all of our very own. And I will tell you it is my prayer that the brave young woman whom we have met recently becomes part of our lives through this beautiful blessing that we would be so lucky to receive. And that is all that I will say today. But know there is hope, and if you believe in the power of prayer, then send all you can our way!!!!
Like I said I want to be very protective, but I also want to be able to share in this new found sense of hope! So thank you for all of your continued support and love along the way.
I think that today’s post deserves a perfectly delicious recipe that is just as sweet and special!
I know, I know, another overnight oats recipe?! Well, yes, it is actually. But this one tastes like one of my favorite food groups: Nutella! Ha! I get more excitement from all of you around my oats recipes that I just can’t quit. And to be honest, you don’t HAVE to make them as overnight oats. You really could just use quick oats but with the same recipes if you don’t remember to make them ahead.
Recently, I was working to make my own hazelnut butter. I lightly toasted some hazelnuts and when I tasted them, I realized that there was not going to be any hazelnut butter that day. Oh no, these babies were destined to be a new play on overnight oats: a Nutella version. But just tossing Nutella into my oats seemed too obvious. So these toasted hazelnuts, cacao powder and crunchy cacao nibs from my favorite brand these days, Natierra (Not sponsored, I literally just love them. They are an amazing company and do amazing things to serve others!). Now THAT was the way these oats were gonna go. A touch of sea salt, some chia seeds, you know the rest is history.

- 1/2 c rolled oats
- 1/2 c unsweetened almond milk or milk of choice (plus a bit more if dry the next morning)
- 2 T raw shelled hazelnuts (I do about 1/2 c at a time and make several servings)
- 1 1/2 T cacao powder
- 2 tsp cacao nibs (you could also use chocolate chips)
- 1 tsp chia seeds
- 2-3 tsp pure maple syrup or sweetener of choice
- Dash of sea salt
- Preheat oven to 350°F.
- Toast hazelnuts for about 6-8 minutes on a baking sheet, remove from oven and allow to cool.
- Combine all ingredients into a jar or container that can be sealed and stir well to combine.
- Close tight and chill overnight or for at least 4 hours.
- Serve cold or heated up in the morning.
- Add a bit more milk before serving if oats seem a bit dry.
