Ok, sorry it’s been over a week since the last time I posted. Routine is nonexistent and the schedule has been packed. I am so excited to get back to a bit of normal. It’s coming, thank goodness.
Two days left of 2016, ready for a fresh start for sure. I am not one for new year’s resolutions, but I do love the concept of starting a brand new chapter and knowing that the year is wide open and full of possibility. So many people go full force and want to make big changes in the new year and then find themselves weeks in back to old patterns. I just like to start off trying to make the best choices I can for myself and do what I can to keep it up. But expecting perfection is what get’s the best of me, so I just promise to do the best I can.
The end of the year also brings up certain milestones or perhaps reminds you of where you were at this time last year, 5 years ago, as a child. Two years ago on this day, I was in the hospital losing our second baby, Eli. And while the thought of it is very sad and a lot of pain surfaces today, I am amazed that I have lived on and I got through what I never thought I would move on from. Two years of lots of tough times, lots of fertility treatments, lots of tears, but even more, two years of showing how strong I can be, and who I can be for those around me going through similar tough times.
I know that the stories I tell are often centered around our fertility journey. I never imagined this would be the road we would be on and we continue to walk step by step, each and everyday. But the closing out of another year brings ache to my heart when I can remember starting 2016 thinking THIS would be our year, this year we would have a baby. And now it is ending and that is not the case. And so that brings me to the fresh start of 2017. I will do nothing but start the year the exact same way, with hope. We will come out on top. We will have a baby, even if we do not have one physically. And it will be the story I continue to share as it is so near and dear to my heart, and to so many I know, and others I have met this year.
So here’s to the start, the beginning. Hoping that the new year brings that same freshness to you and that you continue on your journey of hope as well, for whatever it may be.
Ok, it’s time for chocolate! I know that everyone is typically giving up things like sweets and treats come the new year, so I thought I would share one last treat for the year. And it is actually surprisingly very healthy and protein packed.
I LOVE hummus. I make it pretty often or have some of Trader Joe’s (they have the BEST)in the fridge at all times. But what about a hummus that is also a sweet treat? Yes, please! So I whipped up this Sea Salt + Chocolate Hummus recently and was instantly in love. It’s a dip, a spread and also something you can eat right off the spoon! The chickpeas give the protein and fiber boost to the recipe and maple is used to sweeten. The sea salt balances it all out. I am a sucker for sweet and salty so I used pretzels to dip. You could also spread it on bananas, apples, and so much more!
- 1 can or 2 cups chickpeas, rinsed (pre-cooked)
- 1/3 c cacao
- 3 T pure maple syrup
- 2 T coconut oil, melted
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- In a food processor, blend all ingredients together until smooth.
- Add more maple for a sweeter flavor or more cacao for a richer chocolate flavor.
- Chill for about 30 minutes before serving.
- Garnish with mini chocolate chips if desired.
- Do not over process this as it will dry it out and make the texture too thick. If your food processor is not the most reliable, you can process the chickpeas a bit to smooth them out and then add the rest.
