Here’s to 2018! Hoping it’s already off to a great start for you!
Not sure anything can beat the last part of 2017, but now that we have our Sam here, life just gets better every single day.
As I looked at my first post from 2017, I was amazed at how much I have changed over the span of a year, and I am excited to continue to grow and evolve. The past 3 years has been a journey here at BWBY, and it has grown and evolved with me. I feel the most free and unrestricted in the here and now. And that is my word to start this year: unrestricted.
I am starting this year off unlike any other year. And it feels so good.
It is free of cleansing, detoxing, dieting, and anything along the same lines. And it is the healthiest thing I have ever done for myself. For the first time since I can remember, my new year is starting off without any changes to my diet.
I will continue to eat fruits and veggies when I crave them, and not force myself to eat them when I do not. I will not give up any food or food group. I will eat dessert when I crave it and I will not try to find the healthiest version of it to enjoy rather than the real deal. Here is the thing, the beauty of being an intuitive eater is that you are completely free and open to all foods and therefore you lose the sense of guilt that comes with eating when you restrict certain foods.
We all started our lives as intuitive eaters and I have learned that so much from Sam. He eats when he is hungry, and stops when he is full. He lets us know on both accounts. But somewhere along the line, a big part of society teaches us not to be intuitive eaters but rather to eat according to rules.
Get rid of the rules, your life will be so much better!
So, what can you expect then from Be Whole. Be You. this year?
Food, of course you can expect plenty of it. Lots of recipes coming your way and you will note that no ingredients are off limits as they may have been in the past. I still continue to strive to give you modifications because I know some of you have allergies and I want to do the best I can to accommodate your needs as well.
There will also be plenty of stories as I always like to share my own personal journey and ups and downs. The times I have shared and opened up with you all have always been so healing so I thank you for that. Sam will surely sneak into plenty of the stories since he is now my main squeeze!
Something I will be dabbling in as well is creating some very budget friendly recipes as we have been tightening up since we had Sam and are trying to bounce back from the adoption. There is a lot you can do to stretch a dollar so I will share some of that with you as well.
I am hoping to start some cooking videos for recipes–this is my steepest goal since for some reason they scare the heck out of me. But everyone loves them and they are very helpful so I will step up to the plate.
So what else? What else do you hope to see here this year? I am fully open to requests so just drop a comment if you have anything you would like to see!

I live on these grains and if you can believe it, I eat them more ways than just as overnight oats. For instance, I love it baked like in this Pumpkin Pie Baked Oatmeal. I love oat flour as well. Perhaps you do too and would enjoy some good old Carrot Cake Baked Oatmeal Donuts? Oh, and let’s not forget these Blueberry Lemon Oatmeal Pancake Muffins! The list literally goes on and on. If you search ‘oatmeal’ here you will have lots of options. LOTS.
Tomorrow most of us are getting back to the routine. School goes back to session, holiday breaks are over for those who took some time off. So having to wake up early to make breakfast is probably not what you are interested in, right?
And if you are trying to save some cash, then skipping the drive thru is what you will want to do as well. In that case, I have these delicious cinnamon roll inspired breakfast cookies. How amazing does a Cinnamon Roll Oatmeal Breakfast Cookie sound to you? That will sure get me out of bed!
Hearty oats without the need for a spoon? Count me in! No one will have an excuse to skip breakfast.
And let me tell you about the Greek Yogurt drizzle! It is not a must by any means, but let’s be honest, you won’t want to skip it. I considered some chopped pecans for the topping as well but decided not in the end when putting the recipe together. However, it doesn’t mean I won’t add them next time.
You can use butter or coconut oil if you need dairy free. A dairy free butter will work as well. And if you need to use gluten free oats, those will be fine in this recipe. If you need a gluten free flour, I would suggest an all purpose version. Other than that, you should be good to go! And there is also no rule that says these must be eaten as breakfast. Just sayin’!
- 1 1/2 c rolled oats
- 3/4 c whole wheat pastry flour
- 2 T coconut oil
- 1/4 c butter, softened, or more coconut oil
- 1 egg
- 1/2 T cinnamon
- 1 tsp baking powder
- 1/2 c pure maple syrup
- 1/4 tsp sea salt
- 1 tsp vanilla extract
- 1/3 c Greek Yogurt
- 1 T milk of choice
- maple syrup to taste
- Preheat oven to 350°F.
- In a medium bowl, whisk or beat together butter, egg and vanilla. Stir in maple.
- In another bowl, mix oats, flour, salt, baking powder and cinnamon.
- Add dry ingredients into wet and mix to combine.
- Spoon onto parchment lined baking sheet and bake for 9-11 minutes or until golden brown.
- Allow to cool for 10-15 minutes.
- For best results, add drizzle just before serving. Whisk ingredients together and add to a small plastic bag. Cut small slit and then drizzle each cookie.
